Cold-Pressed Olive Oil from Croatia
Cold-pressed olive oil is produced exclusively through mechanical extraction, without added heat or chemical processing. During production, the temperature does not exceed 27°C, helping to preserve natural antioxidants, polyphenols and the full flavour of the olive.
Unlike industrially processed oils, cold-pressed olive oil retains its natural nutritional properties, aroma and character — qualities that are shaped by the olive variety, soil and climate.
At our family-run olive farm, OPG Branko Marinov in Primošten, olives are harvested by hand and processed on the same day. This careful approach ensures maximum freshness and consistent quality in every litre of olive oil we produce.
Why Our Cold-Pressed Olive Oil Is Different
Why Our Cold-Pressed Olive Oil Is Different
What makes olive oil truly different is not a single step, but the combination of many small decisions made throughout the year.
From the choice of olive variety and growing conditions, to careful harvesting and same-day processing, every stage influences the final character of the oil. By focusing on small batches rather than volume, we allow each harvest to express its natural qualities instead of forcing consistency.
This approach results in an olive oil with depth, balance and a flavour profile that reflects its origin. Subtle variations from year to year are not a flaw, but a sign of authenticity — proof that the oil comes from real olives, grown in real conditions, shaped by nature rather than standardised by industry.
How Our Cold-Pressed Olive Oil Is Made
How Our Cold-Pressed Olive Oil Is Made
The process begins in the olive grove, long before the olives reach the press.
Our olives are grown in the Primošten area, where rocky Dalmatian soil, sun and sea air naturally limit yield and enhance flavour. Harvesting is done by hand, allowing us to select olives at the right moment of ripeness and avoid unnecessary damage.
Once harvested, the olives are transported to a local olive mill and processed on the same day. Cold pressing takes place at temperatures below 27°C, ensuring that the natural properties of the olives are preserved. No heat or chemical treatment is used at any stage.
This careful, time-sensitive process helps retain the oil’s natural antioxidants, aroma and structure, resulting in a fresh olive oil that reflects its origin and the conditions of the harvest.
A Taste Shaped by the Land, Not by Machines
A Taste Shaped by the Land, Not by Machines
Olive oil does not begin in the mill. Its character is shaped by the land where the olives grow.
Soil composition, climate and exposure to sun and wind all play a role in defining aroma and flavour. These natural factors cannot be replicated or controlled by machines. They evolve over time and leave their mark on every harvest.
As a result, the taste of our olive oil is not identical from year to year. Subtle variations in bitterness, fruitiness and peppery notes reflect the conditions of each season. This natural variation is not a flaw, but a sign of authenticity — a reminder that the oil comes from real olives, grown in a specific place, not from an industrial process.

How to Use Our Olive Oil
How to Use Our Olive Oil
Our olive oil is best enjoyed raw, where its aroma and flavour can be fully appreciated. It pairs naturally with fresh bread, salads, vegetables and fish, allowing the character of the oil to remain at the centre of the dish.
When used for cooking, moderate temperatures are recommended to preserve its natural properties. Often, adding olive oil at the end of preparation is enough to enhance flavour without overpowering the ingredients.
A small amount goes a long way — the goal is not to mask the dish, but to complement it.
A Common Misconception About Olive Oil
A Common Misconception About Olive Oil
One of the most common misconceptions is that all olive oils are the same and that the only real difference lies in the price. In reality, the difference begins in the olive grove, continues with the way the olives are harvested, and is defined at the moment of processing.
Olive oils produced in large-scale operations are often blended from multiple sources to achieve a consistent, uniform taste. This approach allows for volume and predictability, but it comes at the cost of character and individuality.
With small producers, each harvest has its own nuances. Flavour can vary slightly from year to year, but this variation is not a flaw. On the contrary, it is a clear sign that the oil is not standardised, but shaped by nature and the conditions of each growing season.
Limited Quantities – Why Not Everything Is Always Available
Limited Quantities – Why Not Everything Is Always Available
Our production is driven by quality, not volume. We harvest olives exclusively from our own groves, and the amount of olive oil we produce depends entirely on the harvest, weather conditions and the yield of each year.
We do not purchase additional olives or blend oils to increase supply. When a specific bottle size is sold out, we wait for the next harvest. This means that not all products are always available, but what is offered always comes from the same carefully controlled production.
This approach ensures that every bottle maintains the authenticity and quality expected by those who value natural products made without compromise.
