Dessert wine from dried grapes (Prošek)
Our dried grape dessert wine, known locally as prosecco, embodies the pinnacle of winemaking, produced using a meticulous process that ensures outstanding quality. This begins with the late harvest of Babić, Maraština and Shiraz grapes, usually at the end of October, one month after the regular harvest. After harvesting, the grapes are dried for 15 days in the sun at temperatures above 40°C, which dries them optimally and reduces their total weight by 10-15%.
The dried grapes are then placed in barrels where they ferment under controlled cooling until the fermentation reaches over 15% alcohol by volume and stops naturally. This careful process results in a dessert wine that is both rich and complex.
Aromas and flavors
Our Prošek offers a profile similar to Italian Vin Santo and Portuguese Madeira, but stands out with its distinct Dalmatian character. It has rich, concentrated aromas and flavors, making it an excellent choice for dessert wine lovers.
Serving suggestions
Prosecco is best enjoyed chilled at a temperature of 10-12°C, and goes well with various desserts, blue cheeses and nuts. Note that Prošek is different from Italian Prosecco, which is a sparkling wine, not a dessert wine.
